Ingredients

10 spring roll wrappers

1 egg, beaten

Instructions

1. In a small mixing bowl, combine the durian pulp, shredded coconut, sugar, and salt. Mix well.
2. Lay out the spring roll wrappers on a flat surface.
3. Place a tablespoon of the durian mixture in the center of each spring roll wrapper.
4. Fold the bottom of the wrapper over the filling, tucking it under the filling tightly.
5. Fold the left and right sides of the wrapper inwards.
6. Brush the top of the wrapper with the beaten egg.
7. Roll the wrapper up tightly, and press the edges to seal.
8. Heat the oil in a wok or deep frying pan over medium heat.
9. Once the oil is hot, gently place the spring rolls in the oil and fry for 3-4 minutes or until golden brown.
10. Remove the spring rolls from the oil and drain on paper towels. Serve hot and enjoy!
