Durian mooncakes are a type of mooncake that has gained popularity in recent years, especially in Southeast Asia where durian is a beloved fruit. The durian fruit is known for its distinct aroma and creamy, sweet taste. When combined with mooncake, it creates a unique flavor that many people find delicious.

Ingredients

300g durian flesh
50g caster sugar
60g butter
20g milk powder
2 salted egg yolks, cooked and mashed
150g plain flour
20g custard powder
70ml vegetable oil
70ml water
Egg wash (1 egg yolk mixed with 1 tbsp milk)

Instructions

1. Prepare the durian filling by blending the durian flesh, caster sugar, butter, and milk powder in a food processor until smooth.
2. Transfer the durian filling to a bowl and mix in the mashed salted egg yolks. Set aside.
3. In another bowl, combine the plain flour and custard powder. Add in the vegetable oil and mix well.
4. Gradually add the water to the flour mixture, mixing until a soft dough forms.
5. Divide the dough into 50g portions and flatten each portion into a small disc. Spoon a tablespoon of the durian filling into the center of each disc.
6. Wrap the dough around the filling and shape it into a ball. Place each ball into a mooncake mold and press down firmly.
7. Brush each mooncake with the egg wash and bake in a preheated oven at 180°C for 20-25 minutes until golden brown.
